Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped maraschino cherries
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chocolate chips
  • Whipped cream and additional cherries for topping

Instructions:

Warm up the oven to 350F 175C and put paper liners in a cupcake pan

Mix the flour, baking powder, baking soda, and salt in a bowl with a whisk

Put away

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

Add the eggs one at a time and beat well

Then add the mashed bananas and vanilla extract and mix well

Mix the dry ingredients in slowly, adding the buttermilk in between each addition

Start with the dry ingredients and end with the buttermilk

The chocolate chips, chopped cherries, and crushed pineapple should all be carefully mixed in

Fill each cupcake liner about two thirds of the way to the top with batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After taking the cupcakes out of the oven, let them cool in the pan for a few minutes

Then, move them to a wire rack to finish cooling

Once the cupcakes are cool, put a dollop of whipped cream, a maraschino cherry, and any other toppings you want on top of each one
