Southwest Tortellini Pasta Salad

A tasty pasta salad with fresh vegetables, cheese tortellini, and a zesty ranch dressing that is based on the Southwest.

Ingredients:

  • 1 package 20 oz refrigerated cheese tortellini
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Lime wedges for garnish

Instructions:

Follow the directions on the package to cook the tortellini

Let it cool down after draining

Put the black beans, corn, cherry tomatoes, red bell pepper, green bell pepper, red onion, and cilantro in a large bowl

The tortellini should be cooked

Whisk the ranch dressing, sour cream, mayonnaise, lime juice, chili powder, cumin, salt, and pepper together in a different bowl until everything is well mixed

Pour the dressing over the salad and toss it around so that everything is covered

Add the shredded cheddar cheese on top, and then mix it into the salad slowly

Allow the flavors to blend by putting the Southwest Tortellini Pasta Salad in the fridge for at least 30 minutes

Add lime wedges as a garnish before serving
