Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions:
Put the quinoa and water in a medium-sized saucepan
Slowly raise the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed
Put 2 tablespoons of butter in a large skillet and heat it over medium-high heat while the quinoa is cooking
Add the minced garlic and cook for about one minute, until the garlic smells good
Put the shrimp in the pan and season with salt, black pepper, and paprika
Cook each side for two to three minutes, or until the shrimp are pink and opaque
Add the cooked quinoa, the last tablespoon of butter, the chopped parsley, and the lemon juice
Mix and toss until everything is well mixed and hot
If you want, you can add more parsley to the top of the hot garlic butter shrimp and quinoa mixture
