Skillet Shrimp Fajitas

Skillet shrimp fajitas are a quick and flavorful meal perfect for busy weeknights. The combination of tender shrimp, colorful bell peppers, and onions seasoned with spices makes for a delicious and satisfying dish.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: avocado, salsa, sour cream, cilantro

Instructions:

In a large skillet, heat olive oil over medium-high heat

Add sliced bell pepper and onion to the skillet and cook until softened, about 5 minutes

Add minced garlic, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper to the skillet

Stir to combine

Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes

Warm flour tortillas in a separate skillet or in the microwave

Serve shrimp fajitas on warm tortillas with optional toppings like avocado, salsa, sour cream, and cilantro
