Ingredients:
- 1 lb beef chuck roast, shredded
- 2 tbsp Jamaican jerk seasoning
- 1 cup pineapple chunks
- 1 cup diced red bell pepper
- 1 cup diced red onion
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 bag tortilla chips
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
Preheat your oven to 375F 190C
In a bowl, mix the shredded beef with the Jamaican jerk seasoning until evenly coated
Spread the tortilla chips on a large baking sheet in an even layer
Sprinkle the seasoned shredded beef over the tortilla chips
Top with pineapple chunks, diced red bell pepper, and diced red onion
Sprinkle shredded cheddar and Monterey Jack cheeses over the top
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly
Remove from the oven and sprinkle with chopped cilantro
Serve hot with lime wedges for squeezing over the nachos
