Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- 2 large sweet potatoes, peeled and diced
- 1 small butternut squash, peeled and diced
- 2 tbsp butter
- 1/4 cup milk
- 1/4 cup grated cheese optional
Instructions:
Preheat oven to 375F 190C
In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is translucent
Stir in frozen peas and carrots, beef broth, tomato paste, Worcestershire sauce, salt, and pepper
Simmer for 10 minutes, stirring occasionally
Meanwhile, in a separate pot, boil sweet potatoes and butternut squash until tender
Drain and mash with butter and milk until smooth
Transfer beef mixture to a baking dish
Spread mashed sweet potatoes and butternut squash over the top
Optional: sprinkle grated cheese over the mashed vegetables
Bake in preheated oven for 25-30 minutes, or until the top is golden brown
Serve hot and enjoy
