Ingredients:
- 1 block firm tofu, drained and pressed
- 1/2 cup cooked quinoa
- 1/4 cup finely chopped bell pepper
- 2 tablespoons chopped green onions
- 2 tablespoons chopped cilantro
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 1/4 cup breadcrumbs
- Oil for frying
Instructions:
Preheat the oven to 375F 190C
Cut the tofu block into 1-inch cubes, then carefully scoop out a small hole in the center of each cube, creating a pocket for the filling
In a bowl, mix together cooked quinoa, bell pepper, green onions, cilantro, garlic, soy sauce, sesame oil, ground ginger, and black pepper
Stuff each tofu cube with the quinoa mixture, pressing gently to compact the filling
In a shallow dish, combine cornstarch and breadcrumbs
Gently roll each stuffed tofu cube in the breadcrumb mixture until evenly coated
Heat oil in a skillet over medium heat
Fry the stuffed tofu cubes in batches until golden and crispy, about 2-3 minutes per side
Transfer the fried tofu cubes to a baking sheet lined with parchment paper
Bake in the preheated oven for 10-12 minutes to ensure the filling is heated through
Serve hot, garnished with extra chopped green onions and cilantro, if desired
