Ingredients:
- 1 box of white cake mix
- 1 cup cranberry sauce
- 1/2 cup vegetable oil
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries optional, for extra texture
- 1 cup powdered sugar for frosting
- 2 tablespoons butter for frosting
- 1-2 tablespoons milk for frosting
- Red food coloring optional, for frosting
- Sprinkles or decorative toppings optional
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with paper liners
In a mixing bowl, combine the white cake mix, cranberry sauce, vegetable oil, eggs, milk, and vanilla extract
Mix until the batter is smooth and well combined
If you like, fold in the dried cranberries for extra texture
Fill each cupcake liner about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are cooling, prepare the frosting
In a separate bowl, mix powdered sugar and butter until well combined
Add milk, a little at a time, until you reach your desired frosting consistency
If you want pink frosting, add a few drops of red food coloring and mix until the color is even
Once the cupcakes are completely cooled, frost them using a piping bag or a spatula
You can also add sprinkles or decorative toppings if you like
