Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sour cream
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Butter or oil for cooking
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
In another bowl, mix the sour cream, milk, eggs, and vanilla extract until well combined
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; a few lumps are okay
Gently fold in the fresh blueberries
Heat a non-stick skillet or griddle over medium-high heat and grease it with butter or oil
Pour 1/4 cup of batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Serve the pancakes warm with maple syrup or your favorite toppings
