Ingredients:
- 2 medium-sized beets, peeled and diced
- 2 cups mixed greens e

- 1/2 cup pomegranate seeds
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt and pepper to taste
Instructions:
Preheat the oven to 375F 190C
In a baking dish, toss the diced beets with olive oil, salt, and pepper
Roast the beets in the preheated oven for about 30-35 minutes or until they are tender and slightly caramelized
Stir them occasionally
While the beets are roasting, prepare the pomegranate glaze
In a small saucepan, combine the balsamic vinegar and honey
Bring to a simmer and cook for about 5 minutes until the mixture has reduced and thickened slightly
Remove from heat and let it cool
Once the beets are done, remove them from the oven and let them cool for a few minutes
In a large salad bowl, combine the mixed greens, roasted beets, pomegranate seeds, crumbled goat cheese, and chopped walnuts
Drizzle the pomegranate glaze over the salad and gently toss to combine
Season the salad with additional salt and pepper if desired
Serve the Pomegranate Glazed Beet and Greens Salad immediately and enjoy
