Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 2 cups buttermilk
- 1/4 cup unsalted butter, melted
- 4 boneless chicken breasts
- 2 cups vegetable oil for frying
- Salt and pepper to taste
- 4 slices of cheddar cheese
- 4 strips of bacon, cooked crisp
- Maple syrup for drizzling
- Lettuce leaves and tomato slices optional
- 4 waffle squares store-bought or homemade
Instructions:
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt
In another bowl, beat the eggs and then add the buttermilk and melted butter
Mix well
Combine the wet and dry ingredients, stirring until just mixed
Be careful not to overmix; its okay if there are a few lumps
Preheat a waffle iron and cook the waffles according to the manufacturers instructions until they are golden brown and crispy
Season the chicken breasts with salt and pepper
Heat vegetable oil in a deep skillet or frying pan over medium-high heat
Once hot, carefully add the chicken breasts and fry until they are cooked through and golden brown on both sides
This should take about 6-8 minutes per side
Make sure the internal temperature reaches 165F 74C
Place a slice of cheddar cheese on each chicken breast and cover the pan to melt the cheese
To assemble the sandwich, place a waffle square on a plate, top with a cheesy chicken breast, a strip of bacon, and optionally, lettuce and tomato slices
Drizzle with maple syrup, and then place another waffle square on top to create the sandwich
Serve hot and enjoy your Fried Chicken and Waffle Sandwich
