Ingredients:
- 1 cup semisweet chocolate chips
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup semisweet chocolate chips additional
- 1/2 cup chopped nuts optional
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a microwave-safe bowl, melt 1 cup of semisweet chocolate chips and butter in 30-second intervals, stirring until smooth
In a separate bowl, whisk granulated sugar and brown sugar until well combined
Add eggs and vanilla extract to the sugar mixture, and whisk until smooth
Pour the melted chocolate mixture into the sugar mixture and mix well
In another bowl, whisk together flour, cocoa powder, baking powder, and salt
Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined
Fold in the additional 1/2 cup of semisweet chocolate chips and chopped nuts, if using
Scoop tablespoonfuls of dough and place them onto the prepared baking sheet, spacing them apart
Bake in the preheated oven for about 10-12 minutes, until the edges are set but the centers still appear slightly soft
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes
Gently transfer the cookies to a wire rack to cool completely
As they cool, the centers will set and become molten lava-like
Serve and enjoy these delicious choc chip molten lava cookies
