Paleo Low Carb Breakfast Burrito Pin

A delicious and healthy Paleo breakfast option that replaces the traditional tortilla with crisp lettuce leaves. Packed with savory bacon, creamy avocado, and fresh veggies, its a low-carb way to start your day.

Ingredients:

  • 4 large lettuce leaves such as iceberg or romaine
  • 4 slices of bacon
  • 2 large eggs
  • 1/2 avocado, sliced
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Hot sauce optional, for added spice

Instructions:

Heat a skillet over medium heat and cook the bacon until crispy

Remove and drain on paper towels

Once cooled, crumble the bacon into small pieces

In the same skillet, remove some excess bacon grease, leaving just enough to coat the pan

Add diced red onion and bell pepper and saut for 2-3 minutes until slightly softened

Whisk the eggs in a bowl and pour them into the skillet with the onions and peppers

Scramble the eggs until cooked to your desired doneness

Season with salt and pepper

Assemble your burrito pins: Take one lettuce leaf and place a portion of the scrambled eggs in the center

Top with avocado slices, diced tomatoes, crumbled bacon, and fresh cilantro

Fold the sides of the lettuce leaf over the filling, then roll it up tightly like a burrito, securing it with a toothpick
