Ingredients:
- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 cup buckwheat flour
- 1/4 cup cacao powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dairy-free milk almond, coconut, etc
Instructions:
Preheat the oven to 350F 175C
Grease a loaf pan and set aside
In a large bowl, mix together mashed bananas, eggs, melted coconut oil, maple syrup or honey, and vanilla extract until well combined
Add buckwheat flour, cacao powder, baking powder, baking soda, and salt to the wet ingredients
Stir until just combined
Gradually pour in the dairy-free milk while stirring, until you reach a smooth batter consistency
Pour the batter into the prepared loaf pan and spread evenly
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely
Slice and serve
