This Spicy Lemongrass and Peanut Thai Quinoa Salad is a delicious and refreshing dish that combines the flavors of Thai cuisine with the nutritional goodness of quinoa. Its packed with aromatic lemongrass, spicy chili, and the crunch of peanuts, making it a perfect light meal or side dish.
Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 2 tablespoons vegetable oil
- 2 stalks lemongrass, finely minced
- 2 cloves garlic, minced
- 1 red chili pepper, finely chopped
- 1/4 cup roasted peanuts, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1/2 cucumber, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 1/2 cup bean sprouts
- Lime wedges, for serving
Instructions:
Put the quinoa and water in a medium-sized saucepan
Bring to a boil, then turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is done and the water is dry
Take it off the heat and let it cool down
Cut up the red chili pepper, minced garlic, and vegetable oil and put them all in a large bowl
Mix it well, then set it aside for a few minutes to let the flavors soak in
Use a fork to fluff up the cooked quinoa, then add it to the bowl with the lemongrass mix
Making sure the quinoa is well covered with the lemongrass dressing, toss it together
